Spicy Noodle Soup

Another recipe request being granted, but as the soup is usually made up of leftovers I'm improvising a lot here....



Ingredients

One medium onion, chopped.
3 cloves of garlic, more if you want a stronger garlic flavour
Four ripe chopped tomatoes (or a tin)
half teaspoon Sambal Oelek  (chopped chilli will give a similar heat) -use less if you don't want it too spicy, more if you like it HOT
Two tablespoons of peas
small tin of sweetcorn
two small potatoes, chopped.
Noodles - add as many or as few as you like- the more you add the thicker the soup will be.
Salt and pepper to taste.

(any other veggies can be added, diced carrots, beans, cabbage, spinach etc -use the ones you like most, or do as I did add leftovers from the fridge.)

Method
1.    Fry the onion until it is soft.
2.   Add the garlic and Sambal Oelek (or chilli) and cook for a further minute or two.  
3.   Add the potatoes and some water to cover. Cook until the potatoes are par-cooked
4.   Add the tomatoes and mix well. Cook until the tomatoes have softened.
5.   Add the remainder of the veggies and enough water to cover them - cook until they are all hot (usually about 8-10 mins).
6.   Season with Salt and pepper.
7. Taste the soup. Add more Sambal Oelek, chillies and salt and pepper to suit your palate.
8.   Finally add the noodles and cook until soft. You may need to add a little more water to adjust the consistency of the soup.

 Serve piping hot with crusty bread. ENJOY!!

    1. Thanks for popping by, Andrea. Glad you like the recipes. AS you know I enjoy the whole 'food' process - growing, preparing and the eating of course. Although not always that healthily. MY sweet tooth is my downfall!
